Pick the right wheat flour

Protein decides how a flour behaves. Higher protein builds more gluten for chewy breads. Lower protein gives tender cakes and pastry.

Our grain calendar

Wheat and rye are harvested in July, and corn in October and November. We store the grain on the farm and mill from our bins.
